Maria Eugenia Rodriguez is currently completing her MSc. in Animal Science in the area of ruminant nutrition at the University of Saskatchewan. Under the supervision of Dr. Peiqiang Yu, she performed a research focused on the effect of varieties/lines, processing methods, and tannin Levels (low and normal) on the structural, physicochemical, and nutritional characterization of faba beans grown in western Canada. Maria comes from Ecuador and before coming to Canada she got a degree in Veterinary Medicine and Zootechniques from Universidad Central del Ecuador.
